Healthy Holiday Party Appetizer: Dairy-Free Crostini

Dairy-Free Crostini Appetizer

Ingredients:

  • 1 baguette
  • 3 TBSP. extra virgin olive oil mixed with 1 tsp. garlic powder
  • 8 - 10 shrimp, cooked and chopped
  • 2 avocados
  • 1 lime
  • prepared hummus (I use Whole Foods' fresh made hummus)
  • micro kale sprouts
  • 2 tomatoes, chopped

Preparation:

Preheat oven to 375 degrees.

Slice baguette in to ¼ slices and place on a cookie sheet. Bruch each slice with olive oil garlic powder mixture. Bake in oven until crispy and slightly browned. Take out and set aside. *Option: buy pre-made crostini in the bakery section at Whole Foods.

Mash avocado with the juice of one lime and put in small serving bowl. Put the chopped shrimp, hummus, micro kale sprouts and chopped tomatoes into separate small serving bowls. Place all the serving bowls on a large tray and surround them with the crostini.

Each guest can top their crostini with any combination of toppings.
